Location :
Planted on silty, clayey and shallow soils (less than 30 cms). The sub-soil is made of schist and Gneiss. Parcels have weak to moderate slopes; the age of the vine is over 40 years old.
Wine Making – Maturing :
Direct pressing, wine making in underground thermo-regulated vats. The wine is left on the lees with one or two bâtonnages (stirring the settled lees back into the wine) to noticeably increase its richness and give the wine a « fatter » texture.
Characteristics :
_ Sight : pale yellow with golden hints.
_ Nose : complex and expressive, first grilled and aniseed, the nose opens up with notes of ripe summer citrus fruits and white peaches.
_ Palate : powerful and greedy, spicy and fruity reinforced by a beautiful mineral freshness.
Aging – Food Paring :
Beautiful harmony and generosity for this wine which can be consumed now or can be kept up to 3 years to fully appreciate its potential.
This wine is ideal as an aperitif but will also pair seafood or fish.
